The Moog Phatty Stage II synth bit too complicated for a beginner?
Not really. I have often heard of the Little Phatty modern Rogue, a very accurate description. The Rogue, made in 1981, moog synthesizer input level, and it was my first time. I learned a lot in mine and still have it, because it is still a source of inspiration. The LP, of course, has some new features like MIDI, patch of memory, and stable oscillators, but the basics are there, and provide everything you need to learn subtractive classic. You may want to wait on the use of more modern things like memory and MIDI patch so you will stick to the basics, but it is certainly an ideal for beginners and veterans synthesizer.
